Sourdough and digestive health
Some time ago I was chatting to an acquaintance about breadmaking. It emerged during our conversation that she suffered from the symptoms of Coeliac disease when she ate shop-bought bread, but did not experience these symptoms when she ate her husband’s home-baked sourdough. I hasten to add that she had not been diagnosed with Coeliac, nor with gluten intolerance – it was simply that she begun to experience the same sort of symptoms. My curiosity aroused, I tried in vain to find similar stories on the web. I was obviously looking in all the wrong places, as a contributor to the Fresh Loaf has posted a link to an interesting research paper on just this subject. I was surprised to find that the study dates back to 2002, and I’m wondering why there hasn’t been more interest in this subject.
